When asked what Sinobi To Go’s best quality is, it took regional manager Selina Kim less than a minute to say Sinobi is both fast and healthy.Jake Butler, the sushi chef of Sinobi To Go, likes to shake things up when he is the kitchen, never quite sticking exactly to the menu because he believes when making sushi there are endless possibilities.Sinobi To Go managerMaureen Conway implies there is no need to worry about the freshness of the food.”Everything is made fresh every single day and throughout the day. The chef and I are both here early setting things up,” Conway said at the Sinobi To Go location Friday afternoon.Sinobi To Go is a new Korean-Japanese Fusion restaurant that opened in Market Square Oct. 10. The idea was born after Master Chef Suklyun Lee established her culinary school in 1971. Later her son would establish Sinobi HQ, Lee’s first restaurant in America. Serving mostly sushi rolls and new creation Asia dogs, Sinobi To Go is a take-out location in comparison to the other Sinobi locations, Sinobi HQ in Pittsburgh Mills Circle and Sinobi Express in Indiana, Pa. While Sinobi To Go is more causal and placed in busy college campuses or business towns, the other two locations offer a sit down and fine dining experience.While the menus are different at every location, Selina Kim is promising some exciting dishes on the Sinobi To Go menu. “I highly recommend to go in for the special sushi rolls. For example like the lightning roll or the French roll, those are fancier rolls I would say, that has the basic California or vegetable roll that everybody is used to but it’s just sliced up with toppings and more of a presentation that you can appreciate,” Kim said in a phone interview Friday.Kim also mentions new rolls will be added to the menu periodically as featured rolls.If one is looking for something a little outside the box, an Asia dog might be a good choice.”Asia dogs, we created to meet with this concept of fast-paced food, which kind of comes from the idea of the regular hot dog- the American hot dog- but it is taking it to a fusion type of cuisine,” Kim said. “We added Korean toppings and different types of sauces that are very infused.”Market Square Sinobi To Go manager Maureen Conway shares how popular these Asia dogs are.”The one I see selling a lot and actually it is my favorite is the Bulgogi Asia dog with the zinger sauce,” Conway said.All the menus for every Sinobi location is created by executive chef Imsub Lee. On the Sinobi To Go menus, the Asia dogs go for $3 each or $5 for two. Customers can choose from three types and a variety of sauces. The most expensive sushi roll on the menu is just $9.50, the cheapest is $6. Side dishes are also offered and a cooler of Korean beverages sits near the counter. Drink choices include an Aloe Vera pulp drink and a carbonated yogurt drink.Butler, who has been cooking since he was 15, has been with Sinobi for about two years. He enjoys the new challenges every day, the artistic element and the never-ending learning opportunities his job provides.Butler shared some of the conveniences and health advantages of dining at Sinobi when he said, “It’s fast and convenient it’s fresh. Stop in, grab something and go back to work. It’s a good alternative to the greasy burger, greasy French fries and boring salad every day. We’re here to stay.”
